Paleo 30-Day Challenge, Day 2:
Great blog to follow: Mark's Daily Apple

Recipe of the Day (snack):
Paleo PB&J
1 cup of berries (strawberry, blueberry, or other)
1 tbsp of almond butter
Take a small bowl of berries (you can use frozen and warm them up/defrost them) and add a spoon full of almond butter (if you can grind your own at the store, some find that to be far superior to what comes in a jar... personal preference). Mix and enjoy!

Here are some recipes for what I ate today:
Smoothie
3/4 cup coconut milk (I found on the main site you could use this)
1 cup frozen strawberries
1/2cup frozen blueberries
1 TBS ground flaxseed
1 scoop protein mix
If it is too thick add a little bit more coconut milk.

Salad
your choice of lettuce
1/2 apple cut in small bite-size pieces
1 kiwi cut in small pieces
5 pecans cut up

Basic Vinagrette (without the vinegar) Dressing
1/4 cup lemon juice
2 tsp. tamari soy sauce
1/8 tsp. garlic powder
1/8 tsp black pepper
1/4 tsp. basil
1/4 tsp. oregano
5 Tbsp. olive oil
Mix together and chill several hours, stir before serving.

I forgot, thanks for the recipes Nicole. We had the sloppy joes today and it was really good. Also I tried your tuna salad, but with chicken and I left out the lemon juice, it was very good also.

Sorry I won't be there on Tue & Thu for a while. I should be there on Mondays (until I switch Tue practice to Mon and then it will be Tuesdays...)
